CHICKEN - RICE SALAD 
3 c. rice, cooked, cooled
3 c. chicken, diced
1 c. pineapple, diced
1 c. celery, thinly sliced
1/3 c. slivered, blanched almonds
1 c. mayonnaise
1/4 c. peach preserves
3/4 tsp. curry powder
Grated Cheddar cheese

Combine rice, chicken, pineapple, celery and almonds. Blend mayonnaise, preserves and curry. Mix all together. Cover and refrigerate for several hours. Top with grated cheese for serving.

NOTE: Be sure the rice is cold. This has to cool all together for at least 6 hours.
