CHICKEN 'N RICE SALAD 
1 pkg. long grain white and wild rice mix
1 (12.3 oz.) can chunk chicken, drained
3 tbsp. sliced olives
2 tbsp. sliced green onion
3 tbsp. chopped red bell pepper
1 chopped fresh Jalapeno pepper
3/4 c. diced, peeled tomatoes
2 1/2 tsp. chopped cilantro
1/4 c. Italian dressing

Prepare rice, mix following package directions and chill. Cut chunk chicken into bite size. Combine salad ingredients. Pour dressing over salad and toss to coat. Cover and chill until ready to serve. Store in refrigerator.
