CHICKEN, RICE, AND HAM SALAD 
1 c. cooked long grain rice
1/2 c. cooked diced chicken
1/4 c. cooked diced ham
2 tbsp. sliced green olives
1 tbsp. minced onion
1/2 c. sliced celery
1 c. mayonnaise
1 tbsp. lemon juice
Salt and pepper to taste

Mix all ingredients. Refrigerate. Serve on a bed of lettuce. Yields 4 servings.
