FRUITY CHICKEN RICE SALAD 
1/3 c. red wine vinegar
2 tbsp. honey
1 tbsp. oil
1 tsp. sugar
1/2 tsp. salt
1 1/4 c. water
1/2 c. carrots, diced
1 1/2 c. instant rice
1/2 c. raisins
2 c. cooked, diced chicken
1 c. red or green seedless grapes
2 tbsp. almonds, chopped
1 tbsp. parsley, chopped

Mix honey, vinegar, oil, sugar and salt in a bowl, set aside. Bring water, carrots and raisins to a boil in small saucepan. Stir in rice. Return to boil. Reduce heat, cover and simmer 5 minutes. Remove from heat and stir. Cover, let stand for 5 minutes. Stir in remaining ingredients. Add honey dressing and toss. Refrigerate at least 1 hour.
