CHICKEN SALAD IN CANTALOUPE
RINGS
 
3 tbsp. oil
1 tbsp. orange juice
1 tbsp. vinegar
1/2 tsp. salt
2 1/2 c. cubed, cooked chicken (or turkey)
1 1/2 c. cold cooked rice
3/4 c. diced celery
3/4 c. green grapes
11 oz. can mandarin orange segments, drained
8 oz. can chunk pineapple in its own juice, drained
3/4 c. mayonnaise or salad dressing
1 cantaloupe, lettuce leaves and 1/2 cup slivered almonds, toasted

In medium bowl, combine oil, orange juice, vinegar and salt. Blend well. Add chicken; stir to coat. In large bowl, combine rice, celery, grapes, mandarin orange segments, pineapple and mayonnaise; blend well. Add chicken mixture to rice mixture; mix well. Cover; refrigerate until thoroughly chilled.
