HAM & POTATO BREAKFAST CASSEROLE 
5 eggs, beaten
1 1/2 c. shredded cheddar cheese
1 tsp. dry mustard
1/2 c. chopped green pepper
1/2 lb. bag frozen hash browns
1 1/4 c. chopped, cooked ham
3/4 c. water
1/2 tsp. salt
Paprika
Dash cayenne

Combine all ingredients except paprika and pour into ungreased 8"x13" dish. Sprinkle with paprika.

Bake at 350°F for 40 to 45 minutes or until knife inserted comes out clean.

This recipe was easy to prepare. I made it ahead of time and stored in the fridge. I took it to a breakfast potluck and I was told that I got an "A plus" for my dish. My husband and I are not big egg fans and we didn't think the eggs overpowered the dish.
