PISTACHIO CAKE 
1 Duncan Hines cake mix (yellow or white)
2 pkgs. instant pistachio pudding
1/2 c. oil
1/2 c. water
1/2 c. milk
5 eggs

Beat cake mix, oil, water and milk. Add eggs, one at a time. Beat after each one. Pour into a greased and floured 10 inch tube pan. Bake at 350 degrees for 1 hour. Cool and remove from pan. Cool thoroughly.

FROSTING:

Prepare 1 package pistachio instant pudding with 1 1/2 cups of milk. Fold in 1 small container of Cool Whip or 1/2 pint heavy cream (whipped). Very good!

I make this cake for every "Spring" holiday, including St. Patrick's Day (everyone needs some green cake!) It is awesome! I add a pudding filling and it makes it even better!

I make this cake for Easter and Christmas as well as St. Paddy's Day. For St. Patrick's Day I add lots of green food coloring in the frosting. For Easter, I color shredded coconut green and sprinkle on top for grass and then I add jelly beans. For Christmas I add red hots in groups of 3 around the top to look like a Christmas Wreath. I get raves for this cake and requests for the recipe. I've made this cake for about 35 years. It's our family favorite. FIVE STAR RECIPE for sure.

This is my husband's favorite cake. I've made it more than 10 times and comes out great each time. I personally like vanilla frosting on it, but he prefers the one in this recipe. I'm going to try these as cupcakes but may have too much frosting. We'll see.
