LINDA'S FIVE INGREDIENT VERY SIMPLE LASAGNA | |
This is my own recipe. I created it while I was very financially challenged, living on W.I.C. and Food Stamps, for my family of five. It is a very flexible recipe as you can use your favorite quart of spaghetti sauce, You don't have to add onions, green peppers or mushrooms. You can increase the amount of meat. Blend a couple meats or use a different ground meat product. The cheese can be a blended cheese, using more or less depending on your taste. It takes about 30 minutes to cook and assemble. Then while it is baking for 30 minutes, you clean up your kitchen, set the table and be ready to eat when finished. Or... you can make it a day ahead and bake when you need it. Very Simple Lasagna: 2 lb. ground beef 1 (24 oz.) can Hunts spaghetti sauce (any flavor) 1 (24 oz.) container cottage cheese, small curd 1 (16 oz.) box lasagna noodles 7 to 12 oz. pkg. shredded mozzarella cheese Optional Ingredients: 1 medium onion, chopped / diced 1 large green pepper, chopped / diced canned mushrooms, drained (depending on how many you like) In huge cooking pot, cook lasagna noodles according to package directions. While water is boiling / noodles are cooking, brown ground beef with green pepper and onions. Drain. Grease large pan to assemble lasagna in. Mine is about 13x19-inches. In large bowl mix ground beef mixture, cottage cheese, spaghetti sauce, and mushrooms (if desired). To Assemble: Put a layer of cooked noodles in bottom of pan. Then sparingly add a skimpy layer of meat mixture and cover with a bag or two of shredded cheese. Repeat Layers until you can't make a full layer and then cover with shredded cheese. Bake at 350°F for 30 minutes or until cheese is lightly brown... or desired color. Submitted by: Linda D. Bock |
