BACON & CHEESE OMELET | |
3 eggs 1 tbsp. butter 1/4 c. Velveeta cheese, mild Mexican 3-4 strips bacon 1. Fry bacon; set aside. 2. Mix eggs with fork just until whites and yolks are blended. 3. Heat butter in 8" skillet or omelet pan over medium high heat just until butter begins to brown. Tilt skillet to coat bottom completely. 4. Quickly pour eggs all at once into pan. Tilt skillet to evenly coat pan. 5. Add bacon and cheese, let stand over heat a few seconds to melt cheese and finish cooking egg. Then fold portion of omelet over covering bacon and cheese. Top with finely chopped bacon and eggs, if desired. |
