SOUTH OF THE BORDER LASAGNA 
12 oz. ground turkey or veal
2 c. canned tomatoes, crushed
1 c. mild picante sauce
1 packet taco seasoning mix
1/2 c. canned diced green chilies
1 c. part skim ricotta cheese (or 1 1/3 c. cottage cheese)
8 cooked lasagna noodles
4 oz. grated cheddar cheese
4 oz. grated Jack cheese

In a large skillet brown turkey. Add tomatoes, picante sauce, taco mix and chilies. Bring to a boil; reduce heat and simmer, uncovered, 10 minutes. In the bottom of a 9 inch square pan spread half of meat mixture. Top with half the noodles. Spread half of ricotta cheese on noodles and top with cheddar cheese. Repeat and end with Jack cheese. Bake at 350 degrees for 20 to 30 minutes. Makes 4 servings.
