EVE'S SOUTH OF THE BORDER
CHICKEN
 
1 bunch fresh cilantro (chopped)
1/3 bunch fresh parsley (chopped)
4 tbsp. olive oil
4 tbsp. white wine
Juice of 2 limes
1/2 tsp. minced garlic
1 tsp. minced shallots (green onions)
1/2 tsp. dried, crushed red chili pepper
1 broiler fryer chicken, cut into serving pieces or 4 chicken breasts

Combine in blender container the cilantro, parsley, olive oil, wine, lime juice, shallots, pepper; blend thoroughly and place in shallow container. Add chicken and marinate for 2 hours. Grill over hot coals until done.
