BLACKEYED PEAS - SOUTH OF THE
BORDER
 
1/2 med. onion, chopped
1 clove garlic, minced
3 slices bacon, chopped
4 c. cooked dry peas
1 (16 oz.) can tomatoes
1 tbsp. chili powder
1 tsp. cumin
1/2 tsp. salt

Combine onion, garlic and bacon. Cook until bacon is brown. Add remaining ingredients. Simmer 15-20 minutes. Serves 4.
