BROCCOLI CHEESE SOUP 
1 lg. head broccoli, cut-up
1/2 c. butter
1 med. onion, chopped
1/2 c. flour
2 c. milk
1 c. Cheddar cheese, grated
2 cans chicken broth
Salt (to taste)
Pepper (to taste)

Cook broccoli pieces in small amount of water until tender. Drain most of the liquid and set aside. Saute onion in butter until transparent. Stir in flour and cook about 5 minutes. Add milk slowly, continually stirring. Stir in grated cheese and blend until smooth. Puree about 1/2 the broccoli pieces in a blender or food processor. (I puree it all.) Leave rest of the broccoli in pieces. Slowly blend chicken broth into sauce mixture, then add puree and pieces of broccoli, Stir to blend well. Add salt and pepper to taste. Simmer about 15 minutes. Makes 4 to 6 servings.
