NORWEGIAN GIFTAS 
2 bags of cranberries
2 c. sugar
1 pkg. graham crackers
1 1/2 c. whipping cream
2 tbsp. sugar
1 tsp. vanilla

Bring 1 cup of water and 2 cups of sugar to a boil, then add cranberries and cook for 10 minutes until berries are soft. Cool mixture in refrigerator. Whip cream and add sugar and vanilla, 2 tablespoons sugar and 1 teaspoon vanilla. Crush crackers into crumbs. When cranberries are cool, alternate layers of cranberries, whipped cream and cracker crumbs in a clear glass bowl. This is a pretty salad, especially for Christmas dinners!
