MARINATED CUCUMBERS, ONIONS 'N
TOMATOES
 
3 med. cucumbers, sliced 1/4 inch thick
1 med. onion, sliced & separated into rings
3 med. tomatoes, cut in wedges
1/2 c. vinegar
1/4 c. sugar
1 c. water
2 tsp. salt
1/4 tsp. coarsely ground black pepper
1/4 c. oil
1 tsp. mint, chopped

In a large serving bowl, combine cucumbers, onions, tomato wedges, vinegar, sugar, water, salt, pepper, oil and mint. Toss well to mix. Refrigerate at least 2 or more hours. 6 to 8 servings.
