MEAT AND CHEESE LOAF 
2 eggs, beaten
3/4 c. milk
2/3 c. bread crumbs
2 tbsp. chopped onion, celery, green pepper
1 tsp. salt
1/4 tsp. chili powder
Dash pepper
1 1/2 lbs. ground beef
1/4 c. hot ketchup
1/2 c. cheese, shredded (or 6 slices American)

Combine egg, milk, bread crumbs, onion, celery, green pepper, salt, chili powder, pepper, ground beef and ketchup. Mix well. Press 1/2 meat mixture into a loaf pan, making an indentation in the meat lengthwise. Place cheese into indentation and cover with remaining meat mixture. Bake at 350 degrees for 1 hour. Drain off fat.

GLAZE:

1/4 c. hot ketchup
1 tbsp. brown sugar
1/2 tsp. dry mustard

Mix all and spread on drained meat loaf. Cook another 15 minutes. Let stand 10 minutes before serving. Serves 6. May be frozen.
