CHEESE MEATLOAF 
3 lbs. ground beef
3/4 c. Italian bread crumbs
2 lg. eggs
3 tsp. salt
1 med. onion, chopped
1 pt. fresh mushrooms, chopped
1/4 lb. Mozzarella cheese
1/8 lb. American cheese (optional)
1 can tomato soup

In large bowl, combine ground beef, bread crumbs, eggs, salt, chopped onion and chopped mushrooms. Form into a loaf. Grease lightly with butter a 13 x 9 inch baking pan. Place loaf in pan. Cut with butter knife a trench across the top going half way through. Fill with cheese slices. Punch the trench shut. Pack it so cheese won't leak out. Pour tomato soup over entire loaf and bake at 375 degrees for approximately 45 minutes.
