CHEESE FILLED MEAT LOAF 
MEAT MIXTURE:

1 1/2 lbs. lean ground beef
2 eggs
1/3 c. chopped onion
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. oregano
1/4 tsp. garlic salt
2 tbsp. milk
1/4 c. ketchup
1 tsp. dried parsley
3-4 slices bread (broken into crumbs)

FILLING:

4 oz. shredded Mozzarella
1-2 tbsp. Parmesan cheese

GLAZE:

3 tbsp. ketchup
2 tbsp. mustard

Prepare meat mixture; mix well. Using slightly more than half the mixture form 2 large patties (or oval), about 1 1/2" thick and place in baking dish. Using fingers, form a "well" in the patties approximately 1/2" to 3/4" deep and to within 1" of edge. Place the shredded Mozzarella and the grated cheese in this "well". Using the remaining meat mixture form another patty that will cover the cheese filled well. Top the loaf with the glaze. Add about an inch of water to the baking dish to surround the loaf and bake in oven at 350 degrees for 1 hour.
