CHEESE - FILLED MEAT LOAF 
1 1/2 lb. lean ground meat
1 c. bread crumbs or crushed wheat crackers
1 tsp. salt
1/4 tsp. pepper
1/2 of an 8 oz. can tomato sauce
1 egg, beaten
1 med. onion, chopped

SAUCE:

1/2 of an 8 oz. can tomato sauce
2 tbsp. prepared mustard
2 tbsp. brown sugar or molasses
2 tbsp. vinegar
3/4 c. water
8-10 slices American cheese

Preheat oven to 350 degrees. Mix first 7 ingredients in mixing bowl. Divide in half. Place 1/2 in loaf pan. Top with cheese leaving a 1/2 inch on all sides. Place other 1/2 on top, pressing sides down to form a seal.

Combine remaining ingredients together in a saucepan and cook over medium high heat until it reaches a boiling point. Pour about half of the sauce over the meat loaf and bake 1-1 1/2 hours, basting occasionally. Serve with reserved sauce. Yield: 6 servings.
