SCALLOPED POTATOES 
3 tbsp. butter
1 small onion, minced
3 tbsp. flour
1 tsp. salt
1/8 tsp. pepper
1 1/2 c. milk
4 medium potatoes, peeled and thinly sliced
paprika, to taste

Preheat oven to 375°F. In a saucepan, over medium heat, cook the onion in butter until tender (about 8-10 minutes). Stir in flour, salt and pepper until blended smooth. Pour the milk in 1/4 cup increments, allowing the mix to wholly absorb the milk before adding the next 1/4 cup. Continue adding milk until you are comfortable with the thickness, and beware of allowing it to become too thin!

In a casserole dish, place the potatoes in a layer that just covers the bottom of the dish. Pour the mixture over the potatoes and sprinkle with paprika. Add an additional layer of potatoes and repeat.

Bake covered for 45 minutes. Then uncover and bake for an additional 15 minutes. Ration carefully as they will go quickly!
