ZUCCHINI CASSEROLE 
3 c. sliced zucchini
1 1/2 c. crushed cracker crumbs
3 eggs
1 c. grated cheese
2/3 stick butter
1 chopped jalapeno
1 c. milk

Cook zucchini in salted water for 5 minutes. Place in buttered casserole along with crumbs and peppers. Melt cheese and butter in milk. Add beaten eggs to milk mixture. Pour over zucchini. Bake at 350 degrees for approximately 1 hour.
