SQUASH CASSEROLE 
6 yellow squash
2 eggs, beaten
Salt and pepper to taste
1/4 c. onion, chopped
1/4 c. butter
Jalapeno peppers, chopped
1/2 c. dry bread crumbs, crushed

TOPPING:

1/2 c. bread crumbs
1/4 c. butter
1/2 c. American cheese
2 slices bacon, crumbled

Cook, drain and mash squash. Add eggs, salt and pepper, onion, 1/4 cup butter, jalapeno pepper and bread crumbs. Pour into greased casserole dish. Top with remaining ingredients. Bake at 350 degrees for 30 minutes.
