LOW FAT BAKED CHICKEN 
4 chicken breast halves
1/2 c. skim milk
2 egg whites
Bread crumbs
2 tsp. butter
Salt to taste
Pepper to taste

Remove skin and fat from chicken. Beat milk and egg whites together. Dip chicken in milk-egg mixture. Roll in crumbs. Place chicken in sprayed or oiled pan. Top each piece with 1/2 teaspoon butter, salt and pepper. Cover. Bake at 350 degrees for 1 hour. To brown, remove cover the last 10 to 15 minutes.

VARIATIONS: Sprinkle on Morton Nature's Seasons, sesame seeds, poultry seasoning or finely chopped onion. My family enjoys this as a substitute for fried chicken. Serves 4.
