SPINACH PIE 
3 (10 oz.) pkgs. chopped spinach (30 oz.)
1 lg. onion, chopped
1/2 lb. feta cheese
1/4 tsp. pepper, or to taste
1/4 tsp. oregano, or to taste
1/4 tsp. basil, or to taste
6 eggs, beaten
Phyllo dough sheets
butter

Cook spinach. Do not add salt. Drain. Saute onion in butter until tender. Combine spinach, pepper, basil, oregano and feta cheese. In a separate bowl, beat eggs. Fold in spinach mixture.

In a buttered 15"x10" baking dish, place 2 sheets of phyllo dough. Brush with melted butter. Add 2 more sheets. Brush with butter. Spread spinach mixture. Top with 2 more sheets of dough. Brush with butter, then 2 more sheets. Brush with butter, tuck sides in and bake at 350 degrees for 30 to 35 minutes.

Can be served as a side dish or, cut into small squares, it makes a wonderful hors d'oeuvre.
