BAKED GARLIC - THYME CHICKEN | |
4 tbsp. butter, softened 2 scallions, chopped or 1 sm. onion 2 garlic cloves, crushed through a press, you can use more if you like 1 tsp. lemon juice 1 tsp. dried thyme leaves, you may substitute dried rosemary 1/2 tsp. salt 1/4 tsp. freshly ground pepper 1 chicken (3 lbs.) cut up Preheat oven to 350 degrees. In a small bowl blend together butter, scallions, garlic, lemon, salt and pepper. Arrange chicken, skin side up, in a 9x13x2 inch baking dish. Spread seasoned butter over chicken. Bake 50 minutes, or until tender, basting occasionally with pan juices. You may want to turn chicken once to brown other side. |
