“SHALLOT BUTTER” IS IN:

SHALLOT BUTTER 
1/4 cup red wine
1 tbsp. fresh minced shallot
1 clove pressed garlic (optional)
1 tbsp. beef, chicken or ham stock
1/4 tsp. black pepper

Simmer 1/4 cup red wine with minced shallot and garlic until liquid quantity has reduced to 1 1/2 tablespoons. Cool for 10 minutes.

Cream butter until light; add to shallot and wine mixture; stir until melted. Stir in 2 tablespoons chopped parsley.

Taste and season with salt and pepper as desired.

Use as an accompaniment for meats or fish.
