STUFFED BELL PEPPERS | |
2 boxes of Rice-a-Roni (one beef and one cheddar Broccoli 1-2 lbs ground beef 5 green bell peppers 1/4 cup tomato sauce 1/2 cup salsa 1 pkg American cheese (24 slices) Preheat the oven to 350°F. Brown ground beef, while browning the Rice-a-Roni. Core and blanch the bell peppers, then use the blanching water to add to the Rice-a-Roni. Add the browned beef to the rice before you boil it. Cook Rice-a-Roni until almost all the water is cooked in. Put one slice of cheese in the bottom of each bell pepper. Add all but 5 slices of cheese to the rice. Mix in the cheese and then stuff the peppers. Put in a casserole dish. Pour tomato sauce and salsa over the top of peppers and put the rest of the rice between the peppers. Bake for 25 minutes then put the last of the cheese on top of the peppers. Bake for 10-15 more minutes then enjoy! Submitted by: Laura Bailey |
