DEIDRE'S STUFFED BELL PEPPERS 
10 to 12 bell peppers

FILLING:

1 cup rice
1 lb. lean ground pork
1 lb. lean ground beef
1/2 minced onion
2 cloves minced garlic
1 1/2 cups shredded Mozzarella cheese
1/4 cup grated Romano cheese
1 handful of chopped fresh parsley
1 egg
salt, to taste
fresh cracked black pepper, to taste

Cook 1 cup rice according to directions and let stand.

Remove stems and seeds of bell peppers and set aside.

In a large bowl, mix ground pork, ground beef, minced onion and garlic, Mozzarella, Romano cheese and parsley. Add rice and egg. Mix with your hands. Season with salt and pepper and combine thoroughly.

Fry a small patty to taste seasonings and adjust if necessary.

Stuff filling into peppers and top with additional Mozzarella cheese. Cook immediately or freeze (these freeze excellent).

Place in casserole dish and cover with tomato sauce. Cover with foil and bake at 350°F for 1 1/2 hours. Remove foil during last 30 minutes of baking.
