CHICKEN SALAD HONOLULU 
1 lb. chicken breasts
1 sm. onion
2 tsp. salt
1/2 tsp. curry powder
13 1/2 oz. can pineapple tidbits
1/2 c. flaked coconut
1 tbsp. lemon juice
Celery tops
1 1/3 c. cold rice
1 c. mayonnaise
1 c. celery, diced
5/8 tsp. pepper

Place chicken breasts along with 1/2 cup water, onion slice, celery tops, salt and pepper in saucepan. Bring to boil. Simmer about 30 minutes. Remove chicken from bones and dice meat.

Mix together mayonnaise, lemon juice, 1 teaspoon grated onion, curry powder, 1 teaspoon salt and 1/8 teaspoon pepper. Combine all ingredients. Toss lightly. Chill. Serve on lettuce. Makes 4 servings.
