ITALIAN ZUCCHINI 
1/2 to 3/4 lb. hot Italian sausage
2 or 3 med. zucchini
1 onion
1/2 lb. mushrooms (optional)
Spaghetti sauce
Grated Mozzarella cheese
Canola oil (or olive oil)

Saute crumbled Italian sausage and chopped onion in oil. Put spaghetti sauce and chunks of zucchini (skin in - seeds out) into kettle or large saucepan. Add sauteed sausage, onions and any oil in pan to kettle. Cook slowly 30 to 40 minutes. Serve hot with grated Mozzarella (as side dish) or can be served over pasta.
