HERMAN STARTER FOR POTATO FLAKE
BREAD
 
1 pkg. yeast
1/2 c. warm water
2 tbsp. sugar
2 1/2 c. all purpose flour
2 c. warm water

Mix yeast, sugar and the 1/2 cup water. Then, mix in flour and 2 cups water. Store in glass jar covered with cloth fastened with rubber band. Keep at room temperature for 5 days. It should bubble and have yeasty aroma. Feed with the following and store in refrigerator. 1 c. warm water 3 tbsp. instant potatoes

You can take out a cupful to make bread anytime as long as it reaches room temperature first. The Potato flake bread recipe was the same as Sour Dough except 1/2 cup sugar instead of 1/4 cup. Use sour dough bread recipe following.

THANK YOU!! I have been looking for this recipe everywhere! Had used it years ago, and my now grown kids say that that bread made with this starter was tops on their cherished childhood memories. Most of what I find do not call for the flour, just yeast, sugar & potato flakes. This is a WONDERFUL starter! Again, Thank you!!

I've also hunted this recipe for years. When I had it originally we all agreed it was the best sourdough bread we'd ever eaten but Herman ruled my life to the point I flushed him finally. Now I know I can FREEZE it when I want to take a break from bread making:)
