CARROT BARS 
3 c. sugar
2 c. flour
1 c. oil
2 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
4 eggs
3 c. grated carrots

Beat first 6 ingredients. Add eggs, one at a time, and beat. Then add carrots.

Bake in jelly roll pan at 350°F to 375°F for 30 to 40 minutes.

Frosting:

1 large pkg. cream cheese
1 stick butter
1 box powdered sugar
1 tsp. vanilla

Sprinkle with nuts.
