FESTIVE ITALIAN VEGETABLES 
1 lb. eggplant, peeled & cubed
1 green pepper, cut
1 tsp. dried oregano
16 oz. jar marinara sauce
1/2 lb. sliced Mozzarella cheese
1/2 lb. sliced Provolone cheese
1 lb. zucchini, sliced
2 med. onions, sliced
1 tsp. dried basil
1 lb. Italian sausage

Place alternate layer of 1/2 eggplant, zucchini, onion, green pepper in 2 1/2 quart casserole. Repeat, sprinkling oregano and basil between the 2 layerings. Pour sauce over vegetables. Cover and bake at 375 degrees for 45 minutes.
