BASIL CHICKEN 
1 roasting chicken, 3 to 3 1/2 lbs.
2 to 3 cloves garlic
4 to 6 stems basil
1 tbsp. olive oil
Salt and pepper

Rinse the chicken with cool water and pat dry. Sprinkle inside and out with salt and freshly ground pepper. Stuff cavity with garlic and basil. Rub skin with olive oil. Put the chicken in a roasting pan and place it in a preheated 275 degree oven for 1 1/2 hours. Serves 3 to 4.
