SHRIMP AND BASIL SOUP (OR CHICKEN) | |
2 tbsp. olive oil 2 tbsp. butter 2 med. carrots, chopped 3 stalks celery, chopped 1 tbsp. chopped fresh basil 2 tbsp. chopped parsley 1 med. onion, chopped Salt and pepper 8 oz. shelled shrimp (or 8 oz. chopped chicken) 1 qt. chicken broth 3/4 c. Marsala 1/3 c. pasta bows 4 tbsp. heavy cream Heat the oil and butter in large pan. Add carrots, celery, basil, parsley and onion and fry gently for 5 minutes. Season to taste, then add to shrimp (or chicken) and chicken broth. Bring to boil, reduce heat and simmer 20 minutes. Add the marsala and bring to boil. Add pasta bows and simmer 5 to 6 minutes. Stir in cream and heat thoroughly. |
