MASTERS DEGREE ROAST CHICKEN
WITH LEMON AND BASIL
 
1 whole chicken
2 med. Walla Walla sweet onions, quartered
1 c. baby carrots
1 green pepper, chunked
2 lg. baking potatoes, cut into eighths
1/2 lemon
1 tsp. sage
1 tsp. basil
Pepper to taste
Butter

Be enrolled full time in classes at the Masters Level. Come home for lunch, but instead of eating, cut up the vegetables, put them in the refrigerator and go back to class. After your last class, preheat oven to 375 degrees. Place chicken in roasting pan, spread vegetables all around the chicken. Place pats of butter here and there on chicken. Sprinkle spices over meat and vegetables. Put 2 thin slices of lemon on top of chicken and squeeze the remainder of the 1/2 lemon's juice all over meat and vegetables. Cover and place in oven. Go study at the library for 1 1/2 hours. Come home and chow down. Go back to the library.
