BAKED CALAMONDIN CHICKEN BREASTS 
8 chicken breasts, skinned and boned
3/4 c. Calamondin Marmalade
2 oz. cointreau

Place chicken breasts with edges rolled under in a shallow baking dish. Pour combination of cointreau and marmalade over chicken breasts. Bake in a 350 degree oven for 45 minutes to 1 hour, depending on size of chicken breasts. Serve with wild rice or white rice. Serves 8.
