BAKED CHICKEN ENCHILADA CASSEROLE | |
1 med. onion, chopped 2-3 tbsp. butter 2 cans cream of chicken soup 1 can cream of mushroom soup 1 c. chicken broth 1 sm. can chopped green chilies 1 (3 lbs.) chicken breasts, cooked and boned 1 pkg. corn Doritos 1 lg. Longhorn cheese, grated Saute onion in butter. Combine with soups, both and green chilies. Add chicken (cut up). In 9 x 13 inch baking dish place layer of chips, layer of chicken and sauce, layer of cheese. Continue layers. Top with broken chips. Bake in 350 degree oven for 40-45 minutes. It may be frozen. Allow 1 hour and 35 minutes for baking if frozen. Serves 8. |
