VERMONT CHEDDAR CHEESE BROCCOLI
SOUP
 
2 c. (1 pkg.) broccoli
2 c. cubed potatoes
1 c. chopped carrots
1 c. chopped onions
4 c. chicken broth
Garlic

Place above ingredients in a pot and bring to a boil. Simmer 15 minutes. Let cool. Puree. Return to pot and blend in 2 cups grated cheddar cheese, 3/4 cup milk and salt and pepper to taste. Heat.

I made this for our Colorado snow day lunch today...My daughter, who is SUPER picky and won't eat any veggies gobbled it up and LOVED it! The puree on the veggies in the soup did the trick to hide them so she had no idea:) She loved croutons on the top...I added some broccoli chunks to mine and ate it with warm crusty bread....DELICIOUS! Thanks!

I made this today and agree the recipe was very easy to make. However, it was very bland and the cheese wouldn't melt in the soup. I used Boar's Head Vermont Cheddar Cheese and was really looking forward to having this for dinner, but ended up disappointed.
