BROCCOLI-CHEDDAR CHEESE SOUP 
2 tbsp. butter
3 tbsp. all purpose flour
4 c. low-fat (1% milk)
3/4 tsp. salt
1/2 tsp. dry mustard
1/4 tsp. cayenne pepper
1 c. chopped broccoli
1/2 c. finely chopped red bell pepper
1-1/2 c. grated cheddar cheese
2 tbsp. chopped chives

Melt butter in a large saucepan over medium heat. add flour, cook and stir 30 seconds or until bubbly. Add milk, salt, mustard, and cayenne pepper. Bring to a simmer over high heat, stirring frequently. Add broccoli and red pepper and return to a boil. Reduce heat to low and simmer uncovered for 5 minutes, stirring occasionally.

Add cheese and stir over low heat just until cheese melts (do not boil). Ladle into 4 soup bowls and top with chives.
