GARLIC CHICKEN 
1 roasting chicken
1/2 c. vermouth, lemon juice or white wine
Salt and pepper
Nutmeg
40 cloves garlic, unpeeled
Oil

Pour vermouth, lemon juice or white wine inside chicken and sprinkle with salt and pepper and nutmeg. Put about 10 cloves garlic, unpeeled, in the cavity and tuck the rest all around the chicken. Put the chicken in a casserole dish and cover with foil, then with the casserole cover. Bake at 375 degrees for 90 minutes.

Serve with French bread. Squeeze garlic cloves on the bread and dip in the juices in the bottom of the casserole.
