HIGHLAND CHICKEN 
2 roasting chickens
1/4 c. lemon juice
1/4 lb. butter, melted
Dash of pepper
1 c. Drambuie
Grated rind of 1 lemon
2 tbsp. soy sauce
3/4 tsp. salt

Wash chicken and pat dry. Combine Drambuie, lemon juice, and rind and butter and soy sauce and seasonings.

Roast chicken at 375 degrees for 3 hours or until tender and brown. Baste with Drambuie mixture, every 15 minutes or place chicken on rotisserie and cook over low heat and speed basing every 15 minutes. Makes 12 servings.
