VEAL PARMESAN 
3 tbsp. butter
1/2 c. corn flake crumbs
3 tbsp. Parmesan cheese
1/2 tsp. salt
Dash of pepper
1 lb. veal cutlets, 1/4 inch thick
1 egg, beaten
1 (8 oz.) can tomato sauce
1/4 tsp. oregano
Dash of onion salt
2 oz. Mozzarella cheese

Preheat oven to 400 degrees. Melt butter in 10 x 6 baking dish. Combine crumbs, Parmesan cheese, salt and pepper.

Cut veal in 4 serving pieces. Dip in egg, then in crumbs, place in baking dish. Bake 20 minutes, turn meat and bake 15-20 minutes more until tender. In saucepan, combine remaining ingredients except cheese. Bring to a boil, pour over meat. Divide cheese in 4 portions. Place one on each piece of veal. Return to oven to melt cheese.

4 servings = 4 med. fat meat, 1 vegetable, 1/2 bread, 371 calories.
