VEAL PARMESAN | |
3 tbsp. butter 1/2 c. corn flake crumbs 3 tbsp. grated Parmesan cheese 1/2 tsp. salt Dash of pepper 1 lb. veal cutlets, 1/4" 1 egg, beaten 1 (8 oz.) can tomato sauce 1/4 tsp. oregano Dash of onion salt 2 oz. mozzarella cheese 1. Preheat oven to 400 degrees. 2. Melt butter in baking dish, 10"x6". 3. Combine crumbs, Parmesan cheese, salt and pepper. 4. Cut veal into 4 serving pieces. Dip in egg then in crumbs. Place in baking dish. 5. Bake for 20 minutes. Turn meat and bake 15 to 20 minutes more or until tender. 6. In saucepan combine remaining ingredients except cheese. Bring to a boil, pour over meat. 7. Divide cheese in 4 portions, place one on each piece of veal. 8. Return to oven to melt cheese. Serves 4. |
