PUMPKIN CHEESECAKE 
2 1/2 c. flour
1/2 c. sugar
1/2 tsp. baking powder
1/2 c. butter
2 (8 oz.) cream cheese
3/4 c. sugar
16 oz. can pumpkin
1 tsp. cinnamon
1/4 tsp. ginger
1/4 tsp. nutmeg
2 eggs
Dash salt

Cream butter and sugar. Blend in flour and baking powder. Press on bottom and sides of 9 inch pan. Bake at 400 degrees for 5 minutes only.

Combine softened cream cheese and sugar. Mix at medium speed until well blended. Blend in pumpkin, spices and salt. Mix well. Add eggs, one at a time. Pour mixture into pastry lined pan. Bake at 350 degrees for 50 minutes. Enjoy!
