FAVORITE SAUSAGE CASSEROLE 
3/4 lb. bulk sausage
1/4 c. chopped onion
2 tbsp. flour
1/2 tsp. salt
Dash of pepper
1 c. milk
1/2 lb. Velveeta cheese, cubed
4 c. cooked, diced potatoes
10 oz. pkg. frozen peas, thawed

Brown sausage. Add onion; cook until tender. Blend in flour, seasonings and milk. Add Velveeta cheese; stir until melted. Add remaining ingredients. Place in 11 3/4 x 7 1/2 inch baking dish. Bake at 350 degrees for 30 minutes. Top with additional Velveeta cheese, if desired. Continue baking until melted.

VARIATION: May substitute 12 oz. package smoked sausage links, sliced for bulk sausage.
