STIR-FRIED PORK IN GARLIC SAUCE 
2 lbs. lean boneless pork
4 tsp. cornstarch
2 tbsp. soy sauce
4-6 tbsp. vegetable oil
8 lg. fresh mushrooms or 1 (4 oz.) can, drained
2 med. onions, sliced
1/2 c. or 1 (8 oz.) can water chestnuts, sliced
2 c. broccoli florets
1-2 carrots, sliced
4 tsp. minced garlic
1 1/2 tsp. ground ginger
1/2 tsp. crushed red pepper
1/2 cup chicken broth or water
4 tbsp. cornstarch
1 tbsp. soy sauce
3 tbsp. orange juice
Hot cooked egg noodle or rice

Cut pork into 1 inch cubes or smaller. Combine cornstarch and soy sauce and pour over meat. Let stand 15 minutes. Pour oil into a skillet or electric wok, heating to 325°F for 1 minute. Add meat and stir-fry 3-4 minutes or until brown. Remove pork, add vegetables and chestnuts, along with garlic, ginger, red peppers. Stir-fry 1 minute or until crisp-tender.

Add pork and stir-fry 2 minutes more or until well heated. Combine low sodium chicken broth or water, cornstarch, soy sauce and juice. Add to meat mixture and cook 1 minute. Serve over cooked noodles.

Serves 8.

I really liked this recipe. The basic technique works great and the orange juice in the sauce tastes just right--not overpowering it at all, but giving it wonderful flavor. I deducted 1 star because I felt the sauce either needs the corn starch reduced by half and/or the chicken broth greatly increased. Based upon the instructions, the sauce turned out very thick for me, but adding a lot more broth fixed the problem!

Excellent! Very flavorful. My husband, who usually doesn't like stir fry loved this. I had very few leftovers after my family ate it for supper.
