RAMEN STIR-FRY 
This is a really easy dish to make. The only "exotic" ingredients are the Ramen noodles, which are available in most grocery stores for around 20-25 cents a package. Ramen noodles are long, thin spaghetti-like noodles that are tightly wrapped around each other for packaging; when they are cooked, they unwind to over a foot in length, so it is usually a good idea to partially break the noodles while they are still in the package.

You will need:

2 pkgs. Ramen noodles
The meat off 4 pieces of chicken (cooked or raw), shredded (about 1 1/4 to 1 1/2 c.).
1 c. mushrooms, sliced thickly
2 c. of other vegetables (broccoli, carrot, etc.)
8 tbsp. soy sauce and seasonings from Ramen noodle pkg.

NOTE: People who want to avoid salt can substitute white wine or sake for the soy sauce and 1 tablespoon each ginger and garlic for the (very salty) Ramen seasonings.

Boil 1 cup water for the Ramen noodles. Put noodles in, turn off heat and cover. (If you have a microwave, put noodles and water together in a covered container and cook for about 4 to 5 minutes on High.)

Take chicken, soy sauce and seasonings and mix together in bowl, then set aside to soak.

Get a skillet or Wok heated up - BEFORE putting the oil in! This is important in that it keeps the oil from burning. Test how hot the pan is by putting one to two drops of water; it if sizzles away immediately, it's hot enough.

Put in about 1 tablespoon oil - just enough to cover the pan (or Wok) bottom and sides. Peanut oil is traditionally used, and is low in cholesterol, but other oils will work, including olive and corn oil (also low in cholesterol).

Put chicken and soy sauce mixture in pan, along with the carrots, and stir constantly. After a minute or so, add broccoli, then mushrooms, stirring all the while. Five minutes and everything should be cooked quite nicely.

Since microwave ovens vary in power, you may need to adjust your cooking time.
