POTATO SAUSAGE "CASH" A ROLL 
1/2 c. chopped onion
1 can cream of mushroom or celery soup
1 tbsp. pimentos, chopped
1/3 c. milk
1 lb. sausage, I like hot, Italian or both
2 c. thinly sliced potatoes
1/2 c. cheddar cheese, grated

Brown sausage and drain. In a bowl combine onion, soup, pimentos, milk; layer, half the potatoes in casserole dish, then half meat, top with half soup mixture, repeat.

Cook 1 hour at 375 degrees covered. Remove cover and sprinkle cheese on top. Cook 15 minutes uncovered.

I use more than 1 lb. of meat.

I sometimes add a layer of canned whole green beans if room.
