SWEET POTATO AND SAUSAGE STEW 
1 lb. smoked turkey sausage link
2 sm. sweet potatoes, cut into 1/2" pieces
1 med. green pepper, cut to 1" pieces
1 stalk celery, cut into 1/2" pieces
1/2 c. chopped onion
2 tbsp. quick cooking tapioca
1 (16 oz.) can tomatoes, cut up
1 (15 oz.) can garbanzo beans, drained
1 c. beef broth (canned)

Cut sausage in half lengthwise; cut into 1" thick slices. In crock pot combine sausage pieces, sweet potatoes, green pepper, celery, onion and tapioca. Add undrained tomatoes, garbanzo beans and beef broth.

Cover; cook on low heat setting for 10 hours or on high setting for 4 1/2 to 5 hours. Makes 4 servings.

This was absolutely delicious!!! What a great "Fall" recipe. I used smoked beef sausage as that is what I had but I believe any type of sausage would work. Didn't have any green pepper...always have red and orange peppers on hand since "Bells" are my least favorite. The sweet potatoes are delicious in this. I cooked on high in crock pot for 2 hrs and turned to low to finish and potatoes were done within the hour. 4 hrs on high is plenty!!!!
